Cooking Project in need of help! Suggestions for...

...An appetizer dish and some easy main course recipes? C:

This is a cooking class project that each student needs to do. I've picked dessert already
which is Rainbow Cupcakes with frosting.
I need an appetizer and a main course now. XD

It should be easy and not one of these recipes:
-French toast

Since I already learned how to make those in cooking. :o
I need a new dish.

Please do suggest desserts as well since Rainbow Cupcakes are really difficult and I want
a less-challenging recipe. :P

Hhhmmmmm...let's see....
I know an oatmeal rasin cookie recipie?
I also know how to make halo-halo, a philipino dessert
I have recipies for Odobo Chicken, Loopia and Ginasung.
Odobo is a great main course, Loopia is sort of like an eggroll, and Ginasung is a fried
mixture of fried pork skins,tomatos,onions, soy sause, and lemon.

Double Tomato Bruschetta 

"A delicious and easy appetizer. The balsamic vinegar gives it a little bite. Dried basil
can be substituted but it is best with fresh."

6 roma (plum) tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil
3 cloves minced garlic
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/4 cup fresh basil, stems removed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 French baguette
2 cups shredded mozzarella cheese

1.Preheat the oven on broiler setting. 
2.In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil,
vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes. 
3.Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in
a single layer. Broil for 1 to 2 minutes, until slightly brown. 
4.Divide the tomato mixture evenly over the baguette slices. Top the slices with
mozzarella cheese. 
5.Broil for 5 minutes, or until the cheese is melted.

Another appetizer recipe.

Deviled Eggs

These were quick and easy. If you want them to be a little prettier, put the egg filling
into a freezer bag, make a cut off of one corner of the bag, and pipe them into the egg
white halves.

1 dozen eggs
2 teaspoons dijon mustard
1/3 cup mayonnaise
1 Tbsp minced onion or shallot
1/4 teaspoon tabasco
Salt and pepper

1 First hard boil the eggs. (See how to make hard boiled eggs.) Fill up a large saucepan
half-way with water and gently add the eggs. Cover the eggs with at least an inch of
water. Add a teaspoon of vinegar to the water (this will help contain egg whites from
leaking out if any of the shells crack while cooking). Add a pinch of salt to the water.
Bring the water to a boil. Cover, and remove from heat. Let sit covered for 12-15 minutes.
Drain hot water from pan and run cold water over the eggs. (At this point if you crack the
egg shells while the eggs are cooling, it will make it easier to peel the shells.) Let sit
in the cool water a few minutes, changing the water if necessary to keep it cool. 

2 Peel the eggs. Using a sharp knife, slice each egg in half, lengthwise. Gently remove
the yolk halves and place in a small mixing bowl. Arrange the egg white halves on a
serving platter.

3 Using a fork, mash up the yolks and add mustard, mayonnaise, onion, tabasco, and a
sprinkling of salt and pepper. Spoon egg yolk mixture into the egg white halves. Sprinkle
with paprika.

How long do you have to cook all three course?
Cause it sure will take a long time, especially main course.

Oh, I have to cook it at home and let my parents critique them.
Then I hand in the recipe, photos, and everything like a presentation.

I think I'll set my cooking time to maximum of 3 hours.

Right now, my pick of desserts is:

And Deviled Eggs.

So are you doing it as an easy main course?

I love strawberry short cake!
I made it with my mom a few times
I made cinamon rolls too, but they're a lot of work.

I'm not quite good with cooking but I can bake. XD
So, I'm gonna work on the desserts and the main course a bit less.
The appetizers should be easy to make, I guess. ;P

Oh, I found an easy Cinnamon Roll recipe.

Mm, maybe. XD It looks hard...Well, Google Images I guess!

Now, I'm feeling like making Peach longitivity buns. >:3
Would be fun and I was planning on making them!!

I don't know about main course.
I'm more of the desserts type of person.
A have a sweet tooth.
Not a main course tooth.

I think all main course are hard.
Because we have a project and its to make a main course for an athlete person.
Took like an 1 hour just to do a calzone.

Yup, I chose rainbow cupcakes as dessert, fried rice as main course, fruit salad as
appetizer and lemonade as the drink. :O
I was rushing so I chose easy foods. :D
