I made this earlier today. It was easy to make and was very filling.
You will need:
3 cups of water
2 chopped onions
1tsp of salt, pepper and sugar
Chicken or veg stock
1 tbsp tomato puree
1 tbsp olive oil
Saute the onions in a large sauce pan using the olive oil to cook them in - do this until
they are tender, and add the tomato puree, chopped tomatoes, stock, water, salt, pepper
and sugar and mix until there is a deep red texture.
Simmer for about 15-20 minutes and then serve hot, with herbs and garlic as a topping, but
