-1lb boneless skinless chicken breast -4 cups canned tomatoes w/green chilies -juice -1 cup chopped onion -1/3 cup garlic -1 Tbsp cilantro -4 cups fat free low sodium chic broth -1/2 tbsp cumin *Optional (this is what gives it that “taco” flavor) Grill your chicken first and shred. Basically, just add all of the ingredients into a soup pot and simmer on medium for an hour! Makes four servings at 84 Calories each. You can add a pinch of shredded cheese on top for about 20 Calories if you’d like. Avocado and sour cream make nice garnishes as well.
